My yummy Chocolate mousse!

250 ml cream
250 grams chocolate
2 Tablespoons of butter
4 eggs- separated
2 1/2 Tablespoons of confectioners sugar

1. Take the chocolate and break it up in a metal bowl over a saucepan of boiing water (double boiler)
2. Add the cream when the chocolate starts to melt.
3.after it is all melted take it off of the heat and add in the butter stir til melted.
4. Add in 2 of the egg yolks (one at a time)
5. Mix the confectioners sugar into the remaining 2 egg yolks til well mixed. After mixed add this mixture to the chocolate mixture! Set this mixture aside
6. Whisk or beat together the egg whites until stiff peaks form.
7. Fold the egg white mix into the chocolate mixture. When everything is well blended put into the dishes you want to serve out of.
8. Place the dishes in the refrigerator and leave them there to set for no less than an hour.

When you serve it you can make whipped cream with Vanilla and sugar. Top the mousse and decorate with fruit, chocolate shaving sprinkles whatever.

Beer Bread

3 cups flour
3 tsp. baking powder
1 tsp. salt
1/4 cup sugar
1 can (12 oz) beer
1/4 cup melted butter

preheat the oven to 375
grease a loaf pan
sift together all of the dry ingredients
add the beer to the dry ingredients and mix well
pour mixture into greased loaf pan
pour melted butter on top and cook for 45 min. to an hour til the top is crunchy and golden brown!

Enjoy! It tastes great plain, with butter, jam for breakfast or as a side to any meal!

Erin's Zucchini Squares

Zucchini Squares....This was a hit. 3 cups thinly sliced zucchini, 1 cup flour, 1 big spoon baking powder, 1/2 cup chopped onion, 1/2 cup parmesan cheese (1 paket), 4 eggs, 2 Soup spoons chopped parsley, 1 tsp seasoned salt (vegeta) 1 tsp oregano, little pepper, 2 cloes garlic chopped, 1/2 cup oil. combine and mix all ingredients in bowl; mix wel. Spread in greased 9 by 13 pan. Bake at 350 (175) deg. for 25 mins.

Basic Sugar Cookies!

1 3/4 c. unsalted softened butter
1 c. sugar
1 egg lightly beaten
3 c. flour

cream butter and sugar (with optional flavorings) until mixed well and creamy

beat in the egg until well combined. Mix on low until dough ball forms. Wrap and chill in fridge 1 hour.

when ready place dough on floured surface and knead lightly and evenly.

use cutters for shapes and use a spatula to lay on parchment paper lined cookie sheet. Chill again for 30 min. preheat oven to 350 or 200 C. Bake for 8-12 min. Cool on a wire rack!

Tzatziki

Pineapple Kiwi Relish

1 can crushed Pineapple or pineapple tidbits
2 kiwi diced
1 small red onion
Lime or lemon zest
1/2 tsp. lime juice

Mix and serve

2 cups all-purpose flour
3 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
1/3 cup cold butter
3/4 cup cold milk

Mix dry ingredients, then cut in cold butter with 2 forks or pastry cutter. When butter is cut in and mixture is grainy add milk. Stir until it forms a ball (you can always add more milk if needed). Then on a clean floured space roll out and cut with a cookie cutter or floured glass. Place on greased cookie sheet or baking stone. Bake at 350 for 10-12 min or until tops are golden!

My Nutella Oatmeal Cookies!

1/3 cup butter (melted)
1 cup packed brown sugar
1 egg
1 cup flour (sifted)
1/2 tsp. salt
1 tsp. baking powder
1 tsp. vanilla extract
1/3 cup Nutella
2 cups oatmeal (rolled oats)

you will need two bowls and a mixer.

melt butter and stir in sugar, add unbeaten egg and beat until well blended. Sift together flour salt and baking powder and stir into 1st mixture. Blend in Nutella, vanilla and oats.

Drop by teaspoon onto cookie sheet (I use an ungreased baking stone) Bake at 325 for 10-15 min. Cool on wire rack.
