Wildberry Scones

  • 3 cups all-purpose flour
  • 1/2 cup white sugar
  • 5 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup butter
  • 1 egg, beaten
  • 1 cup milk
  • 1/2 teaspoon cinnamon
  • 1 pkg Vanilla sugar (in the States 1/2 teaspoon Vanilla)
  • 1 cup blended berries (strawberries and blueberries etc) finely cut or mashed
  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease mini cupcake tins.
  2. In a large bowl, combine flour, sugar, baking powder, cinnamon, vanilla sugar (If in Europe) and salt. Cut in butter. Mix the egg and milk in a small bowl, and stir into flour mixture until moistened. If in the States add the Vanilla extract here.
  3. Use a Tablespoon to spoon the mixture into the mini cupcake tins.
  4. Bake 15 minutes in the preheated oven, or until golden brown.
Serve with jam and butter, and certainly eat them and drink tea! *

*You can make flavored butter by mixing softened butter with jam to serve, it is awesome!

Joni's Homemade Salsa

3 Tbsp minced onion
1 Tbsp Salt
1/2 black Pepper
4-6 cloves garlic
15-20 roma tomatoes
1/2 jalepeno pepper
1/2 serrano pepper
garlic salt to taste
you can also add cilantro if desired

in food processor chop everything but tomatoes, once well blended add tomatoed 2 at a time until you have desired taste. Store in an airtight container.

Me Me's Oatmeal Cookies

2/3 cups butter (melted)
1 cup packed Brown sugar
1 egg
1 cup flour (sifted)
1 tsp salt
1 tsp baking powder
1 tsp. Vanilla
2 cups rolled oats
1 cup raisins

I substitute M&M's and/or chocolate chips for the raisins to make it my own, and I also add Cinnamon(to the raisin ones) and almond extract to both!

Melt the butter, pour the melted butter into a large bowl, cream together the brown sugar and melted butter, add the unbeaten egg and blend well. Sift together the flour, salt and baking powder. (if living in Europe: sub 1 pkg vanilla sugar and add in here as well)

add the sifted ingredients and mix well. Now add in the oatmeal and raisins or the chocolate chips (whatever you decided)

Drop by teaspoon onto a greased cookie sheet. Bake at 325 F or 200 C for 10-15 min!

Easy Iced Tea

I learned how to do this by reading German tips in one of the recipe booklets I picked up here. It worked and it was great.

Get 4 tea bags and place them in a small bowl of boiled water. Let them sit and brew. Pour the tea concentrate into a pitcher with cold water and Ice cubes and serve!

Greek Salad like they do it in Greece

Country Greek Salad

In Greece you do not have lettuce in the salad.

1 cucumber
1 bell pepper
1 large tomato
1 onion
20 olives (purple is best all will work)
1 pkg. Feta Cheese

Clean and cut everything and throw in a bowl. Drizzle Olie oil, and 3 drops of Apple Cider or Red Wine Vinegar. take a pinch of each of the following and sprinkle over:
Oregano
Basil
Marjoram

Mix the oil and spices in with your hands and serve! Yum!

Lupicja's Cevapi

I went to Bosnia-Herzegovina in June. Amanda Haskew and I went to a retreat there. We stayed with a friend of mine. She and her husband wanted us to try something that area of the world was known for. They took us to a little place and we tried Cevapi for the first time. I loved it, and while we were in Sarajevo, we were told they had the best around we never did taste it there.

We had a wild ride home to Vienna with Croatian Fans headed to Vienna for the EU Fussball Cup Championships. It was an experience I could never explain in words.... just trust me. I sought shelter with a nice older lady. We got to talking abotu things I enjoyed from my travels and she said well I can teach you how to make some of those things. Here is the 1st recipe. I love it, my family loves it and the friends who have tried it enjoyed it as well!

Cevapi

1/2 lb ground beef
1/2 lb ground pork
1 small onion
1 garlic clove
a pinch of sugar
salt and pepper to taste (start with 1/2 tsp each)
splash of Olive Oil
3 pinches of chili pepper (optional)

Mix well and refrigerate overnight.

When ready to prepare you need to roll the meat into little sausages the width of 2 fingers. Then cook them in a hot pan with very little olive oil.

Serve with a pita or flatbread put 3 cevapi inside, and serve with sliced onion and Ajvar on the side. This is a eggplant/red pepper spread you can buy.

A Holiday recipe passed on from my Mother-in-laws Best Friend!

recipe for baked carp.

spread mayo on bottom of baking dish, then sliced onion, and carp repeat in layers until fish is used completely. Would likely be good with all fish.

We had this at Christmas this year and it was tasty!

My Blueberry Muffins

This really came about as an accident, but they taste great with the secret ingredient! Ha Ha!

Ingredients:
2/3 cup sugar
1/2 teaspoon salt
2- cups all purpose flour
1/2 bread crumbs
1 tablespoon baking powder
1 large egg
1/3 cup vegetable oil
1-1/4 milk
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 pkg/ cup fresh blueberries
